Pan-Seared Salmon w. Arugula-Mint Pesto, Quinoa Salad & Char-Broiled Sugar Snap Peas
I’m notorious amongst my friends & family for having a pattern of food cravings that can only be classified as “The Salty-Sweet Rotation“. Strawberries, then bacon, then marshmallows, then vinegar chips, then dark chocolate, then garlic croutons- the rotation is endless. Sometimes if I’m particularly impatient, I will literally pour & eat a pinch of salt out of the palm of my hand… annnd shortly thereafter, I go looking for the peanut butter.
The quest is endless….
Fortunately, I’ve discovered a recipe that satisfies all my Salty/Sweet cravings! I created this Seared-Salmon dish by following a recipe from HelloFresh. The salty/savory taste of the salmon paired perfectly with the bitter/sweet arugula-mint pesto. The Quinoa salad added heartiness to the dish, and the sugar snap peas contributed a much appreciated crunch (not to mention the flavor – I loveeee snap peas). Overall, I really, really enjoyed this recipe!
